Mushroom and Vegetable Patties
• 2 cups Portobello mushrooms, cubed (smaller pieces) lightly sir fried. • 2 cups cooked black beans (2 tins of organic or if you are forward thinking, raw beans rinsed, soaked overnight and then cooked to soft. • 1 cup minced broccoli, or vegetable of your choice eg cauli or finely shredded spinach. put through the processor or grate • 1/2 cup red onion, chopped finely • 3 large eggs, beaten • 1/2 cup of the flour of your choice • 2 Tbsp minced garlic • 3/4 cup fresh grated Parmesan optional Here comes the fun bit, spices to suit you and your family , Eg coriander and chilli, or basil, or cumin and curry powder, rosemary and a little thyme, mint, at this stage I like to throw it all in the processor and blitz it for a little bit, this helps to keep the patties together but it is an option. Form into patties: if you like you can dip in egg then breadcrumbs, but I don’t bother with that, then cook in coconut oil or olive oil, make sure its NOT smoking hot though. Serve with a nice green salad or a salad of your choice.
The picture shows little bite size ones with a hot dipping sauce as I am heading out to night and needed a plate, but this is only half the mixture , hubby will cook some larger patties up for him for dinner his and freeze the rest.
